MELT Organic Whole Wheat Banana Pancakes with Almond Milk
  • 2 very ripe bananas, mashed
  • 1 cup whole wheat flour
  • 1 cup spelt flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • pinch of salt
  • 1 cup nutpods dairy-free creamer
  • 2 eggs
  • 1 tsp vanilla
  • 2 Tbsp Rich & Creamy MELT Organic or MELT Organic Buttery Sticks melted
  1. Combine dry ingredients in a medium bowl, set aside.
  2. In a large bowl, combine mashed bananas, nutpods dairy-free creamer, eggs, and vanilla.
  3. Add the dry ingredients to the banana mixture, stirring gently until just combined.
  4. Add the MELT (or Honey MELT), and give a few more gentle stirs.
  5. Heat griddle or pan to medium-medium-low and melt some Rich & Creamy MELT Organic or MELT Organic Buttery Sticks to prevent pancakes from sticking to the pan.
  6. Drop pancake batter onto hot griddle, and wait 1 minute or so, until you see little bubbles forming on the top of the pancakes.
  7. Flip once, and finish cooking, about another minute.
  8. Remove from heat and serve with a small pat of MELT Organic (or Honey MELT) and a hefty drizzle of maple syrup (maybe even some banana slices.) Enjoy!
