Veggie Quinoa Salad
This is so simple and yummy and we make quinoa with all kinds of other ingredients and combinations of them including nuts, dried cranberries, tomatoes, feta cheese, shredded cheese, and whatever veggies we have on hand.
  • 2 ripe avocados
  • 2 cups chicken gf chicken broth or veggie broth
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 3 stalks celery, diced
  • 1 Cup Quinoa (I used the Inca Red variety)
  • 1-2 tsp Rich & Creamy MELT
  • 2-3 Tblsp lime OR lemon juice
  • Salt and Pepper to taste
  1. In a medium saucepan, cook quinoa according to package directions using broth in place of water.
  2. Remove from heat and stir in MELT. Let cool.
  3. Cut avocados in half, remove pit, peel and cut into chunks.
  4. Toss avocado in lemon OR lime juice.
  5. Add avocado and remaining ingredients to quinoa and toss gently to mix.
  6. Chill until ready to serve.
