Peanut Honey MELT® Caramel Corn
  • 2 tablespoons vegetable oil
  • ⅓ cup popcorn kernels
  • ½ cup Honey MELT
  • 1 ½ cups packed light brown sugar
  • ½ cup sugar
  • ⅛ cup water
  • ¾ tsp salt
  • ½ tsp baking soda
  • 1 cup salted peanuts
  1. Heat the vegetable oil in a heavy, 3-quart saucepan.
  2. Add three kernels of popcorn and cover, heating over medium heat until the kernels pop. Remove the lid and add the rest of the kernels.
  3. Cook, shaking the pan frequently, until the kernels stop popping. Remove from the heat and uncover.
  4. In a large, shallow baking dish, line the bottom with foil. Brush some melted Honey Melt on the foil.
  5. Melt the Honey MELT in a 6-quart or larger heavy pot over medium heat.
  6. Add the brown sugar, sugar and water and bring to a boil over medium heat, stirring.
  7. Once the mixture comes to a boil, stop stirring and cook for 8 to 10 minutes or the temperature registers 300 degrees on a candy thermometer.
  8. Remove the pot from the heat to prevent burning.
  9. Immediately add the salt and baking soda, stirring with a wooden spoon or heatproof spatula.
  10. Then stir in the peanuts and popcorn to coat.
  11. Transfer the mixture to the foil-lined pan, spreading the mixture thin and as even as possible. Cool completely and then break into pieces.
