Oatmeal Chocolate Chip Cookies
Serves: makes 60 cookies
  • 1 Cup Rich & Creamy MELT Organic
  • ¾ Cup firmly packed light or dark brown sugar
  • ½ Cup granulated white sugar
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1 Cup all purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ⅛ tsp ground nutmeg
  • 3 Cups rolled oats
  • 2 cups semi-sweet chocolate chips (or the whole bag!)
  • 1 cup chopped walnuts (optional)
  1. Preheat oven to 375 degrees F
  2. In a large bowl, cream MELT with brown and white sugars using electric mixer until creamy and lightened in color.
  3. Add egg and vanilla. Mix on low speed until mixed thoroughly.
  4. In a small bowl, stir together flour, baking soda, salt, cinnamon and nutmeg. Add to the creamed mixture until blended.
  5. Stir in oats, chocolate chips and walnuts.
  6. Using a tablespoon, drop onto cookie sheet 2 inches apart.
  7. Bake 7-9 minutes for chewy cookies or 10-11 minutes for crispier cookies.
