Mini Vanilla Wafer Cookie Sandwiches

Ingredients
  • Mini Vanilla Wafer Cookies:
  • ½ cup Rich & Creamy Melt®
  • ½ cup sugar
  • ¼ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1⅓ cup all purpose flour
  • ½ tsp salt
  • ½ tsp baking powder
  • White Chocolate Orange Ganache:
  • ¼ cup heavy cream
  • 1 tsp grated orange zest
  • 3 oz melted white chocolate
Instructions
  1. Mini Vanilla Wafer Cookies: Preheat oven to 325F and line a baking sheet with parchment paper. In a large bowl, cream together Melt® and sugars, then beat in egg and vanilla extract. In a separate bowl, sift together the flour, salt and baking powder. Stir into the Melt® mixture to combine. Scrape dough into a pastry bag fitted with a plain round piping tip. Pipe a swirl of dough onto the prepared baking sheet, making each cookie the size of a quarter. Cookies will spread, but only a little space is needed between cookies. Bake at 325 F for 10 to 15 minutes, until cookies are a light golden brown. Leave on baking sheets to cool completely. In the meantime, make the ganache filling.
  2. White Chocolate Orange Ganache: Heat the heavy cream until just simmering. Off the heat add the orange zest, then let stand until barely warm. Stir into the melted chocolate and whisk until smooth and creamy. Chill for 3 - 5 minutes or until it just starts to set.
  3. Pipe or use a small spatula to apply the ganache to the flat side of a cookie, and then place another cookie on the ganache, flat side down, to form a sandwich.
