Melted Snowman Cookies
For the cookies:
  • 1 cup Honey MELT
  • ½ cup sugar
  • ½ cup powdered sugar
  • 1 egg
  • ½ teaspoon baking soda
  • ½ teaspoon cream of tartar
  • Pinch of salt
  • 2 ¼ cups flour
For the icing:
  • 4 egg whites
  • 8 cups confectioners’ sugar, or as needed
  • ¼ cup lemon juice, or as needed
  • 24 large marshmallows
  • 1 (.75 ounce) tube black decorating gel
  • 1 (.75 ounce) tube orange decorating gel
  • 1 (.75 ounce) tube red decorating gel
  • 1 (.75 ounce) tube green decorating gel
For the cookies:
  1. Cream Honey MELT, sugar, and powdered sugar.
  2. Beat in egg.
  3. Sift dry ingredients and add to creamed mixture. Mix well.
  4. Refrigerate dough for at least 1 hour.
  5. Drop 1” round spoonful on cookie sheet and press to flatten (about ⅛” thick) into circle shape.
  6. Bake at 375 degrees for about 8 minutes until the edges begin to brown. Watch closely as they can burn easily.
  7. Cool completely on wire rack.
For the icing:
  1. Beat egg whites lightly in a large bowl using an electric mixer until frothy.
  2. Slowly beat enough confectioners’ sugar into egg whites to make icing that will hold shape.
  3. Blend in lemon juice until desired consistency is reached.
  4. Place icing in 1 quart Ziplock bag and cut a small corner off bottom of bag for drizzling the icing.
  5. Arrange cookies about 1 inch apart on a large sheet of waxed paper.
  6. Drip icing onto each cookie, allowing icing to drip over edges to look like melting snow.
  7. Grease a microwave-safe plate and place marshmallows on the plate.
  8. Microwave marshmallows until they start to puff up, about 30 seconds.
  9. Immediately place marshmallows on the edge of each cookie while the icing is still wet to look like a melted snowman.
  1. Decorate melted snowmen by piping twig-like arms using black decorating gel on the icing.
  2. Make coal eyes and mouth on the marshmallows using black decorating gel.
  3. Make a carrot nose under the coal eyes using orange decorating gel.
  4. Make coat buttons using black decorating gel.
  5. Make scarves or bow ties using red or green decorating gel.
  6. Allow cookies to fully dry before removing from waxed paper, at least 1 hour.
