Mashed Sweet Potato Oat Crumble
  • 4 large sweet potatoes
  • 1 cup sugar
  • 1 cup milk
  • 2 eggs
  • 1 ½ teaspoons vanilla extract
  • 1 ½ teaspoons sea salt
  • 1 cup brown sugar
  • 1 ½ cups pecans
  • ½ cup quick cook gluten-free oats
  • ½ cup cornstarch
  • 1 ½ teaspoons ground cinnamon
  • ½ cup Rich & Creamy MELT OR Honey MELT
  1. Preheat oven to 375 degrees F.
  2. Line a baking sheet with foil and place sweet potatoes on the baking sheet.
  3. Bake for 45-50 minutes until the potatoes are soft and easily pierced with a fork.
  4. Cool the potatoes for 15 minutes.
  5. Slice open each of the potatoes and scoop out the soft filling into a large mixing bowl.
  6. In a separate bowl, whisk together the sugar, milk, eggs, vanilla and salt.
  7. Pour this mixture into the bowl with the potatoes and using a hand mixer or potato masher, mash until a smooth but somewhat chunky mixture forms.
  8. Pour potato mixture into a casserole baking dish.
  9. To make the crumble topping, combine brown sugar, pecans, gluten-free oats, cornstarch, cinnamon and MELT OR Honey MELT in the bowl of a food processor.
  10. Pulse 4 or 5 times just until the mixture is combined and looks like a crumble pie topping.
  11. Sprinkle crumble evenly over the potato mixture and then bake for 35-40 minutes until golden brown.
