Heirloom Tomato Salad on Grilled Bruschetta
  • 2 lbs. tomatoes, diced
  • ½ small red onion, thinly sliced
  • 2 cloves garlic, finely chopped
  • 3 Tbsp red wine vinegar
  • 6 Tbsp Rich & Creamy Melt®, melted
  • ½ C packed basil leaves, thinly sliced
  • Salt and pepper
  • 4 – one-half inch thick slice of ciabatta bread
  1. Combine tomatoes, onion, garlic, vinegar, 4 Tbsps Melt® and basil in medium bowl. Season with salt and pepper to taste.
  2. Allow flavors to meld at room temperature for 30 minutes. Heat a grill or grill pan to high heat. Grill the bread on each side until slightly charred, about 30 seconds per side. Remove from grill and brush tops with remaining 2 Tbsps Melt.
  3. Mound the bread slices with the tomato mixture and some of the juices. Serve immediately.
