Havarti Veggie Quesadillas
  • 4 burrito-sized flour tortillas
  • 1 cup cooked long-grain white or brown rice
  • 1 (14 oz.) of black beans, drained and rinsed
  • 1 cup of roasted red peppers
  • 1 cup of fresh spinach
  • 4 oz of sliced Havarti dill cheese
  • 1 tsp mayonnaise
  • 2 tsp Rich & Creamy Melt®
  1. Mix the rice and beans together in a bowl mix in the mayonnaise. Divide the mixture on two tortillas and top with the peppers, spinach and cheese. Use the other two tortillas to cover the tortillas covered in toppings.
  2. Heat a large skillet over medium heat with 1 tsp of Melt in the pan. Divide the other teaspoon of Melt® equally over the surface of each of the top tortillas on each quesadilla.
  3. One at a time, grill the quesadillas, flipping when the bottom tortilla browns and the contents inside begin to cook. The quesadilla is ready when the cheese has melted and the rice and beans have been heated thoroughly.
