Fruit Slaw with Honey Melted Almonds & Raisins
  • ¼ cup slivered almonds
  • ¼ cup golden raisins
  • 1 medium apple, finely diced
  • 10 oz. each of slivered carrots, broccoli and red cabbage
  • 14 oz. classic coleslaw mix – green cabbage and carrots
  • 1 cup mayonnaise
  • 2 ½ tsp cider vinegar
  • 1 tsp. Honey MELT
  • Pepper (to taste)
  1. Heat Honey MELT in a small saucepan over medium heat. Once melted, add the almonds and raisins and cook until the almonds turn golden and the raisins plump.
  2. Remove from heat and cool completely.
  3. In a small bowl, mix together the mayonnaise, cider vinegar and pepper to taste. Set aside.
  4. In a large bowl, combine the apple, slivered veggies and coleslaw mix. Toss to combine.
  5. Add the cooled almonds and raisins and toss again.
  6. Drizzle the mayonnaise and vinegar mixture over the vegetables and stir to coat.
  7. Refrigerate until chilled.
