Brussels Sprouts & Green Apples

  • 1 lb Brussels sprouts, washed and sliced in quarters
  • 2 tablespoons Rich & Creamy MELT
  • Salt
  • Garlic powder
  • 2 tart green apples, sliced in thin strips
  • 2 tablespoons orange juice
  • 2 tablespoons lemon juice
  • 2 tablespoons lime juice
  • 1 tablespoon red wine vinegar
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon pepper
  • ¼ cup extra virgin olive oil
Instructions
  1. Preheat oven to 400 degrees F.
  2. Place Brussels sprouts on a baking sheet lined with foil.
  3. Melt the MELT® in microwave and drizzle over Brussels sprouts.
  4. Sprinkle sprouts lightly with salt and garlic powder.
  5. Roast for 18 to 20 minutes until lightly golden and crisp.
  6. Remove sprouts from oven and cool completely.
  7. In a large mixing bowl, combine green apples and cooled Brussels sprouts.
  8. Gently stir to combine.
  9. In a small mixing bowl, whisk together orange juice, lemon juice, lime juice, red wine vinegar, salt, garlic powder and pepper.
  10. Slowly whisk in olive oil until the mixture emulsifies.
  11. Pour dressing over salad and gently toss to combine.
  12. Cover and refrigerate for 30 minutes before serving.
