Baked Potato Soup
  • 10 slices bacon
  • ½ cup Rich & Creamy Melt®
  • ⅔ cup all-purpose flour
  • 5 cups milk
  • 2 cups heavy cream
  • 4 large baked potatoes, cubed
  • 4 green onions, chopped
  • 1¼ cups shredded Cheddar cheese
  • 1 cup sour cream
  • Salt and Pepper to taste
  1. Place bacon in a large, deep skillet. Cook over medium heat until browned. Drain, crumble, and set aside.
  2. In a soup pot, melt the Melt® over medium heat. Whisk in flour until smooth. Gradually stir in milk and cream, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil, stirring frequently.
  3. Reduce heat, and simmer 10 minutes. Mix in bacon, cheese, sour cream, salt, and pepper. Continue cooking, stirring frequently, until cheese is melted.
