Acorn Squash Puff
  • 2 cups mashed cooked acorn squash
  • ½ cups spreadable cream cheese
  • 1 cup dry bread crumbs
  • 2 tbsp brown sugar
  • 1 egg
  • 1 dash of ground ginger
  • Salt and pepper to taste
  • 2 tbsp melted Honey MELT
  1. Cut your acorn squash in half. Place in a glass baking dish with a ¼ inch of water in its bottom with the cut sides down.
  2. Bake at 350 for 30-45 minutes or until the squash is tender. Cool completely.
  3. Scrape the squash from the rind and set aside 2 cups. Save the rest of the squash for another recipe.
  4. Keep the oven at 350.
  5. In a mixer, combine the squash, cream cheese, brown sugar, egg, ginger, salt and pepper and ½ cup of the bread crumbs. Mix well.
  6. Add the mixture of a 1 L baking dish.
  7. In a small bowl, mix together the melted Honey MELT and the other ½ cup of bread crumbs.
  8. Spread the bread crumb mixture onto the squash mixture.
  9. Bake for 30-35 minutes or until golden brown. Serve warm.
