Banana Chocolate Chip Muffins

Ingredients
  • 1½ cups all-purpose flour
  • ½ cup wheat bran
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • ½ or ¾ cup semi-sweet chocolate chips (your choice)
  • 1 large egg
  • ¾ cup packed light brown sugar
  • 1 and ⅓ cups mashed ripe bananas (2 to 3 bananas) for added banana flavor use 4 ripe bananas
  • ⅓ cup Rich & Creamy Melt®, softened
  • 1 teaspoon vanilla
Instructions
Preheat oven to 375. Use standard muffin cups, either greased or with liners.
  1. Whisk together: ½ cups all-purpose flour, ½ cup wheat bran, 1 teaspoons baking powder, ½ teaspoon baking soda, ¼ teaspoon salt, 1 teaspoon ground cinnamon, ⅛ teaspoon ground nutmeg
  2. Stir in: ½ or ¾ cup semi-sweet chocolate chips (your choice)
  3. Whisk together in a large bowl: large egg, ¼ cup packed light brown sugar and ⅓ cups mashed ripe bananas (2 to 3 bananas), ⅓ cup Melt®, softened, 1teaspoon vanilla
  4. Add the dry mix to the wet mix and fold until just blended. Batter will be lumpy.
  5. Spoon into lined or greased muffin tins
  6. Bake 14-16 minutes or until toothpick inserted into 2 muffins comes out dry.
  7. Eat immediately or cool on wire racks.
  8. Enjoy with additional dollop of Rich & Creamy Melt®!
