Chipotle Drizzled Mozzarella Stuffed Meatloaf
Serves: 8
For the Chipotle Sauce-
  • 2 cups water
  • ¼ cup chipotle chiles in adobo sauce
  • 3 plum tomatoes, diced
  • ½ teaspoon salt
For the Meatloaf-
  • 1 sweet yellow onion, roughly sliced
  • 2 carrots, peeled and roughly chopped
  • 3 garlic cloves, peeled
  • 2 tablespoons MELT Rich & Creamy
  • 1 teaspoon ground cumin
  • ⅛ teaspoon ground nutmeg
  • 2 lbs lean ground beef
  • ½ cup gluten-free breadcrumbs
  • Chipotle sauce, recipe from above divided
  • 3 eggs, beaten
  • 2 teaspoons salt
  • 1 cup shredded mozzarella cheese
  1. Preheat oven to 375 degrees F.
  2. Lightly grease a 9x5 inch loaf pan and set aside.
  3. To make the chipotle sauce, bring water to a boil in a medium sized saucepan and then add in the chiles, plum tomatoes, garlic and salt.
  4. Reduce heat to medium and simmer for 30 to 40 minutes or until most of liquid is evaporated.
  5. Let cool and puree in a food processor. Set aside.
  6. To make meatloaf, combine sliced onion, carrots, and garlic cloves in a food processor until minced.
  7. In a medium sauté pan, heat 2 tablespoons of MELT Rich & Creamy over medium high heat and sauté mixture until tender, about 5 minutes.
  8. Add cumin and nutmeg, stirring until thoroughly combined.
  9. Remove from heat and set aside.
  10. In a large bowl, fork ground beef until crumbly.
  11. Stir in the sautéed onion mixture, breadcrumbs, ½ cup chipotle sauce, eggs, and salt.
  12. Mix until well combined.
  13. Press half of the meatloaf mixture into the bottom of the greased loaf pan.
  14. Sprinkle mozzarella cheese in the center, lining the walls in the pan with more meatloaf mixture.
  15. Top with remaining mixture in an even layer and drizzle with remaining chipotle sauce.
  16. Bake the meatloaf for 1 hour, then remove from oven and carefully drain the juices.
  17. Bake for an additional 30 minutes or until firm and remaining juices run clear.
  18. Remove from oven and let cool slightly for about 10 minutes.
  19. Carefully remove the meatloaf from the loaf pan, slice, and serve.
